I occasionally find myself working on small jobs such as simple web design, system administration tasks, and troubleshooting PCs.
That is more or less how I got into this. If you are interested, I bet there are lab tech position available at your school. Working in a lab can be crazy, but it is like a crash course through the breadth of computing. I don't use so-called "office software", but I know more than most people about Excel, just from helping accounting students.
Knowing about XHTML Strict 1.0 will be helpful. Though the "strictness" is kinda lifted in HTML, well-formed code will always be useful. If I don't leave myself notes in my templates, I go crazy, so keep that in mind when learning all the crazy cool things HTML5 has. ^_^
Right on! Your instructor has the right idea, those challenges are a great way to learn Webcraft.
If I may make a suggestion, drop some links in your post. If your course has a site, link to it, and definitely link to the Webmaking 101 page.
One of the great advantages of digital publishing is that you can go back and edit stuff. ^_^
