How about allowing people to focus on subjects and vocabulary relevant to their daily lives? a grammar exercise using sport as en example might be less interesting or seem less relevant to somebody depending on their interests.
Set up language discussion groups around subjects or methods? i.e. having a french film group or a spanish-language cooking and food group?
What ideas can you come up with to make language modules and structures more relevant to people learning?
